The onion is one of the oldest vegetables consumed by man. Onions lend themselves to various recipes, they are used to flavor salads, in the preparation of a delicious hamburger, to enrich the flavor of an omelette, or as a side dish to pair with a steak. After harvesting, the onion undergoes a blanching, seasoning and subsequent potting phase. A heat treatment process then follows which makes it stable at room temperature.
